Preface

Psychobiotic foods represent an emerging intersection of food science, microbiology, nutrition, neuroscience, and public health. The concept is based on the possibility that selected microorganisms, microbial substrates, fermentation-derived metabolites, and food matrices may influence mental well-being through the microbiota–gut–brain axis. The term should be used carefully. Not every fermented food is a psychobiotic, not every probiotic strain produces the same outcome, and evidence of an effect on the gut does not automatically demonstrate a clinically meaningful effect on mood or cognition.

This book adopts a food-centred perspective. Rather than treating psychobiotics only as capsules or isolated strains, it considers whole foods, fermented foods, dietary fibres, resistant starches, polyphenol-rich ingredients, and postbiotic preparations. It also addresses product development questions: how a psychobiotic ingredient can be selected, incorporated into a stable food, evaluated for sensory acceptability, and studied using reproducible human research methods. Throughout the text, mechanistic plausibility is distinguished from clinical proof, and mental-health-supportive nutrition is presented as complementary to—not a replacement for—professional care.
